What will you do in this job?:
Lead BOH Culinary operations including: banquets, restaurants, off-site events & group event management functions
Execute a progressive and inspired product that differentiates the Restaurant from its competitors
Continually evaluate the food program processes; proactively taking action to capitalize on opportunities for growth in efficacy and quality
Proactively take steps to drive outlet Food and Beverage targets and become a top culinary destination for culinarians within Alberta
Adhere to Financial forecasts and established budgets: control food and labour costs
Execute culinary vision as developed by the Head Chef Jasper Lodging and Food & Beverage Director
Supervise, mentor and train BOH Team Members to ensure daily and weekly checklists are completed
Maintain accurate par levels for ordering using approved vendors; ensure proper rotation and par stocks of all foods are being handled
Adhere and Train all BOH employees to follow safety, sanitation, and security procedures for the Crimson hotel
Development and implementation of all seasonal menu launches, food presentation, recipes, and food costing of all items in conjunction with Head Chef Jasper Lodging
Ensure all recipes are maintained to company standards
Ensure timely, accurate and effective use of Inventory Management Program (Compeat Radar)
Foster a positive, diverse, and inclusive work environment
Create a culture of empowerment, teamwork, continuous improvement, and a passion for positivity while providing exceptional hospitality
Leading by example in maintaining the integrity of the rules, regulations, and operating procedures
Recruiting and onboarding to build a high functioning and positive team with a continued focus on retention
Daily inspections on cleanliness and organization
Work as one unit with the Front of House – one team, one food and beverage department
Work collaboratively with sales, marketing, and group services in executing of events
Attend weekly banquet event order review meetings. Review current and future events to be proactive in conference event planning
What skills and experience do you need for this job?:
5 years relevant experience, including at least 3 years of management experience
High volume, fast paced dining experience required
Red Seal Certification or Equivalent certification required
Experience building relationships and working on teams across all levels of an organization
Proven track record in maintaining a high level of organization
Effective communicator and able to implement and uphold high service standards
Driven to fostering a team building environment and creating positive guest experiences
An eye for detail and quality
Showing leadership in a positive, calm, consistent and focused manner
Computer literacy with knowledge and experience with Micros, Delphi or similar Property Management Systems
Maintain a neat, clean, and well-groomed appearance per Pursuit standards
