What will you do in this job?:
A Sous Chef is the lead supervisor of all food preparation while coordinating the work of Cooks and Dishwashers. Responsibilities include;
Supervises the training and cross-training of kitchen personnel
Researches, recommends and implements new policies and procedures relating to food preparation
Reports all maintenance and repair needs to Executive Chef
Supervises, expedites and participates in food preparation, in accordance with standards of quality, quantity, taste and presentation
Checks food for taste, temperature and visual appeal
Supervises the presentation and return of food
Stores food items in refrigeration boxes to prevent contamination
Ensures the satisfaction of guest requests for special food items
Supervises the creation of attractive food displays
A promoter of teamwork inter-departmentally to ensure on-going positive relations within the kitchen, front of house operations along with other departments
Accountable for the safety of all staff and work areas, continually keeping safety top of mind
Check orders received for quantity and quality of product
Check the quality of raw and cooked food products
Assist with staff development and training
What skills and experience do you need for this job?:
Journeymen’s Red Seal, or equivalent preferred
3 years’ experience in a similar role and sized operation
Experience living and working in a remote camp setting or busy ski resort an asset, but not required
Must be an effective leader, manager, trainer, administrator, team builder/player and communicator
Proven success in the ability to implement and maintain standards
Strong background in banquets, high volume cafeterias or high production kitchen
Comfortable delivering a la carte menu service, upper scale cafeteria meals, and banquet/buffet service
Creative and innovative personality
Comfortable working on your feet for extended periods of time in both an indoor and outdoor environment. Be prepared for all weather conditions (Snow, Rain, Wind, Hail)
Must meet the Organization grooming and appearance standards

Busy. You need to be prepared for a physical working environment with walking, stair climbing, bending, reaching, lifting (up to 50 pounds with assistance) required
