What will you do in this job?:
We are currently looking for an Executive Chef to lead the culinary team at the Glacier Discovery Center at the Columbia Icefield, located in Alberta, this position offers a unique experience to live in one of the most scenic parts of the Canadian Rockies. We provide an incredible culinary experience to grow, test and develop your abilities. This is a year round position.
Managing the kitchen operations and staff daily
Ensuring a consistently high-quality food product is made while at the same time developing staff through a positive work environment
Consistently improving guest and employee satisfaction while maximizing revenues
Overseeing all food operations including one a la cart/buffet restaurant, one cafeteria, hotel lounge and staff camp
Providing a product that differentiates ourselves from our competitors
Maintain product levels not exceeding levels that result in waste
Constantly evaluating the success of our food and beverage program and proactively taking action to capitalize on opportunities for growth in volume or quality
Adherence to financial forecasts and budgets; instrumental in taking steps to assist the division in exceeding Food and Beverage targets
Development and implementation of all seasonal menu launches, food presentation, recipes and food costing of all items
Approve all kitchen staff schedules
Responsible for the timely management of job task checklists, safety checklists, performance review and performance management.
Ensure all employees follow safety, sanitation and security procedures
Plays an active role with Executive Sous Chefs preparing schedules for all food services, tracks and manages kitchen payroll daily in accordance with revenue, forecast and budget
Reports to Food and Manager
Manages employees regarding the preparation and presentation of all food for restaurants and banquet facilities
Ensure all recipes are maintained to company standards
Takes all necessary actions to produce food cost and labour cost results that meet or exceed budgeted expectations.
Meet weekly with Executive Sous Chefs to confirm BOH schedules are in line with the monthly forecast; ensure daily and weekly checklists are completed; ensure accurate par levels for ordering using approved vendors; ensure proper rotation and par stocks of all foods are being handled.
Maintain core standards as developed by F&B Shared Services
Reports to the Jasper Food and Beverage Operations Manager
Adhere to People and Culture standard operating procedures
What skills and experience do you need for this job?:
Red Seal; CCC will be an asset
Extensive culinary skills, including minimum 2-4 years of culinary school; symbolizing excellence in creativity, quality and professionalism
Must be -able to work in remote setting
Enthusiastic, energetic person capable of carrying out all charges in a very unique environment
Minimum four years well rounded experience in all areas of the Kitchen at an Executive Chef level
An effective leader, manager, trainer, administrator and team player
Exceptional communication and organizational skills
Innovative, detail oriented and quality conscious
Excellent oral and written communication skills along with good computer knowledge
Product and quality obsessed with excellent knowledge in menu engineering and design.
