Job Description

We invite you to join the world of luxury hospitality at Fairmont Jasper Park Lodge, as our new Head Butcher.

As Head Butcher, you will lead and oversee all butchery operations, supporting the culinary team by delivering expertly prepared proteins across beef, poultry, game, and seafood. You will ensure the highest standards in quality, yield, food safety, and efficiency, while developing a skilled team and contributing to menu innovation, cost control, and overall culinary excellence.

What you will be doing:

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues
Follow departmental policies, procedures, safety and service standards
Lead and manage all butchery operations (meat & seafood) with focus on quality, yield, and efficiency
Break down whole animals, primal cuts, and seafood with precision
Supervise daily production, labeling, storage, and rotation of proteins
Train, mentor, and develop butchers and cooks
Maintain strict hygiene, cleanliness, and food safety standards
Monitor food cost, yield management, and portion control
Manage inventory, monthly reconciliation, and product traceability
Collaborate with Executive Chef and Purchasing on forecasting and ordering
Support menu development (cuts, sourcing, sustainability)
Ensure compliance with brand standards and recipes
Manage allergies and dietary requirements
Be attentive industry trends and contribute to revenue strategies

Qualifications

Your experience and skills include:

Minimum 2 years culinary leadership experience (luxury/large-scale preferred)
Red Seal Certification (or equivalent)
Valid Canadian Food Handling Certification
Advanced butchery skills (whole animal breakdown)
Strong knowledge of:
Yield management
Inventory control
Food cost & labor management
Strong organizational and communication skills
Computer proficiency (Word, Excel, PowerPoint)
Creative mindset with focus on quality and innovation
Commitment to sustainability and responsible sourcing
Visa Requirements: Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
