Sunwapta’s Restaurant has several distinct services:

Breakfast (A La Carte mostly lodge guests)
Lunches (QSR, Short Order as well as Specialty Functions for Tours)
Dining (A La Carte Dining, Some Specialty Functions for Tours )
Our hotel guests are typically breakfast and dinner clients, and our capture rate is high. During the day, while they are out sightseeing so are all the thousands of people traveling on the world famous Icefields Parkway where we are located.

We have a high quality, high reputation, quick serve restaurant from 8am to 5pm. Food to go, food to stay, and specialty menus catering to individual consumers and some of the worlds largest travel trade companies. The daytime restaurant is built for efficiency and speed, but with everything baked and made fresh daily.

In the evening it’s all about our hotel guests and providing them with unforgettable food in our historic lodge's intimate dining room. Here is where you really get to shine. To put things in perspective, we have had past hotel guests come back the next year JUST to try new items on the menu! Food is a MASSIVELY important part of our high ratings on social and online channels.

Sunwapta is a semi-remote Mountain Lodge (53km south of downtown Jasper on the incredible Icefields Parkway) with 45 of staff and management members all living on property. This is not a corporate atmosphere. You will find all managers work hard and commit everything they have and that we support each other in ensuring mutual success. It is a collaborate environment that offers the chance to contribute your values in a way rarely found in more ‘boxed’ environments. Summary/Objective

The executive chef is responsible for all culinary activities for the restaurant. This position will oversee all activity in the kitchen, train personnel, assist in planning menus, oversee product purchasing and manage culinary budget.

Essential Functions

Make periodic and regular inspections of units to observe quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment and employee appearance.
Develop recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation and established procedures and budgetary constraints; participate in other menu planning activities to include the determination of purchasing specifications, product and recipe testing and menu development.
Assist operation managers as requested in areas such as plate presentation, special function menu planning and the design of new service areas.
Prepare operational reports and analyses setting forth progress and adverse trends and make appropriate recommendations.
Perform other related duties incidental to the work described herein.

This position manages all employees of the department and is responsible for the performance management of the employees within that department.

Work Environment

The work environment can be loud and busy. There are many kitchen hazards such as hot surfaces and liquids, sharp knives, and slippery floors.

Physical Demands

The employee is required to stand for long periods as well as walk, bend and stoop. The position requires working taste buds, ability to smell, feel with fingers and visually inspect, including close and distance vision. The position requires ability to use arms, hands and manipulate fingers to reach, stir, measure, pour, cut, chop, dice, decorate, etc.

Position Type/Expected Hours of Work

This position regularly requires long hours and weekend work.

Preferred Education and Experience

You should have all relevant certifications as well as at least 3 years operating at an Executive Chef level for upscale restaurant.

Work Authorization/Security Clearance

We will only consider applicants who already possess a valid Canadian work visa, or are permanent residents or citizens of Canada. We are unable to sponsor any applicants to gain work visas or residency.

Other Duties

Attend regular food and beverage meetings as well as management meetings as required. We don’t waste time, only make it more valuable. Exceptional communication is key to success.
