We are keeping an eye on COVID crisis, but in the mean time we are scheduled to open May 14, 2020. We will most likely have to delay our open date until June 4 like all other hotels in Jasper.

About the Position
The line cook positions at Sunwapta are the night line. We are currently hiring for both 1st and 2nd cooks so regardless of your experience level in a kitchen we may have the right position for you.
The 1st Line Cook position is so important that many seasons it is the position of the Sous Chef. Under supervision of Sous Chef/Executive Chef, this position is responsible for dinner line set-up and Mis-en-place. It is important to ensure the line is set-up on time, before dinner service begins. Prepare and serve all dinner menu items, as well as daily specials. Follow recipe standards, portion control, quality control and Food safe guidelines at all times. Ensure prompt service of plated foods, and ready for Dining Room to open on time.
The 2nd cook position at Sunwapta reports to and works with the Sous Chef. They prepare and plate most of the evening dishes. This is a busy position and a step up from regular line cooking. There are many different cooking techniques to master. Ideally after a season in this position you are ready to pursue a first cook position in charge of a night line.
Depending on your role your responsibilities and duties could include:
- Prepare and cook the evening dinner menu at Sunwapta. This is the highlight of many visitors holiday.
- Understanding how important this position is to our guests perception of their Sunwapta experience
- Maintaining a positive attitude and leading the kitchen by example
- Understanding how important training and motivating are to the success of all team members at Sunwapta and wanting to help people learn and grow in their position
- Assist with any banquets or set menus as required
- Lots of prep, we do approx. 100 covers a night
- You need to establish a good rapport with the Sous Chef who is your main work mate
- Helping the dishwasher wrap things up at the end of the evening
- You are responsible if the Sous Chef is not in the kitchen
- Plating in a fast and efficient manner
- Making the Sous Chef look good
Qualifications and Skills
- This position requires two years in a similar position (that could be fine dining or a sit-down restaurant for the 1st line cook or fast food or any restaurant experience for the 2nd line cook)
- The 1st line cook will be providing an example both on and off shift so you will need to be comfortable doing that.
- To be successful a 1st line cook you need to be interested in learning more about training and motivating staff.
- You love fine dining or you're interested in learning more about high-quality restaurant food and service
- You will be busy all shift so you need a calm temperament
- Fast and efficient you like to get the job done
